Profile
I am Matilde Cappelli, born on May 28, 1998, in Bagno a Ripoli (FI).
I hold a Bachelor’s degree in Viticulture and Enology from the University of Florence and a Master’s degree in Viticulture, Enology, and Wine Markets, with a specialization in Economics and Marketing in the Wine Business, from the University of Udine.
I am a PhD student in Sustainable Management of Agricultural, Forestry, and Food Resources, with a curriculum in Food Science and Technology.
Research interests and PhD project
The research activity focuses on the wine production process, with particular attention to the integrated study of redox status and the prediction of oxidative stability through the development of predictive models. The project investigates the mechanisms of oxidation reactions, also through accelerated ageing tests.
