Profile
I’m Sofia Trentanove. I earned my Bachelor's degree in Food Technology in 2022 and my Master's degree in Food Science (110/110 cum laude) in 2024, both from the University of Florence. I worked for two years in the sensory analysis department of a company specializing in food and cosmetic testing.
Since November 2024, I am a PhD student in Sustainable Management of Agricultural, Forestry, and Food Resources, with a curriculum in Food Science and Technology.
Research interests and PhD project
My research interests primarily focus on promoting the adoption of healthy and sustainable eating habits within the population, particularly in school canteens among children and adolescents. Additionally, I am interested in studying the relationship between the sensory properties and nutritional composition of foods and exploring how this relationship can be utilized to drive food innovation.
