Nicole Cattarin (born in Bibbiena on 04/04/1995) holds a Bachelor’s degree in Dietistica (110/110 cum laude) and a Master’s degree in Food Science, both from the University of Florence. Currently she is a PhD research fellow at the SensoryLab and employed at a school catering company as a dietitian
Research interests and PhD project
Her main research interests concern the adoption of healthy and sustainable eating styles by children. Her doctoral project focuses on the development of vegetable protein-based dishes for school catering, studying their liking and acceptability by children. .
