Silvia D’Agostino holds a Bachelor’s degree in Biological Sciences and a Master’s degree in Food Science and Nutrition from University of Florence, Italy. Her studies currently focus on wastes from food industries, mainly plant wastes, dealing with the challenge to recover and re-use them through innovative strategies in a second type of production. The main goals of her research are to keep the process environmentally and economically sustainable and, at the same time, enhance the technological and nutraceutical properties of the food by-products
