 I am Elisa Mani, I was born on 16/10/1993 in Florence. In April 2018 I received my Master’s degree in Pharmacy at the University of Florence with a thesis entitled “Millet, Wheat, Spelt: optimization of extractive procedures for phenolic compounds”. In July 2018 I took my Pharmacist License Exam and from September I am a member of “Order of Pharmacists of Florence”. Currently I am enrolled in a three-year PhD program in Food Science and Technology at the University of Florence

Research interests and PhD project

My PhD project aimed to evaluate the relationship between biological and physiological traits characterizing our oral environment and the intake of food enriched in phenolic compounds. The focus will be on individual differences in taste perception and on the bioaccessibility and bioactivity of these compounds after the releasing from food matrices
